Originating in Central America and the Caribbean, traditional Barbacoa is an approach to making slow-cooked, tender smokey meats. It’s the predecessor to the American Barbecue we know and love today. At El Toro Barbacoa, we honor this tradition with our own take on modern Mexican Cuisine and house smoked Regional American BBQ Styles.

A Lancaster native, Emily Pryzbylkowski was intrigued to learn that a vacant restaurant space, in Millersville, was available in her hometown. She and husband Gabriel Montalvo, who met at culinary school while working in Philadelphia, had toyed with the idea of opening a restaurant for several years, and the opportunity to do something new close to home — and in a college town — appealed.
Today, the two are pleased to be serving Modern Mexican and Regional American styles of Barbecue at El Toro Barbacoa.
